Warqi is a kind of paratha that has several layers. You can see Pathan making this paratha every morning in different cities of Pakistan. The upper layer of this paratha is super crispy and golden. You can have it with different curries and tea.
2 cups all-purpose flour
1/2 tsp salt
1/2 cup vegetable oil
1/2 cup water
In a large mixing bowl, combine the flour and salt.
Slowly pour in the vegetable oil and mix it into the flour using your fingers. Rub the flour and oil together until the mixture becomes crumbly.
Gradually add water and knead the dough until it becomes soft and pliable. Cover the dough with a damp cloth and let it rest for 15-20 minutes.
Divide the dough into 6-8 equal-sized balls.
Dust a rolling surface with some flour and roll out one ball of dough into a thin circle.
Brush the surface of the rolled out dough with some oil.
Sprinkle some flour over the oiled surface.
Using a sharp knife, cut the circle into thin strips, approximately 1 inch wide.
Stack the strips on top of each other.
Using your fingers, press down gently on the stack of strips to flatten it slightly.
Roll out the stack into a thin circle.
Heat a tawa or flat skillet over medium heat.
Place the rolled out paratha on the tawa and cook for 1-2 minutes on each side or until it is golden brown and crispy.
Repeat the process with the remaining dough balls.
Serve hot with your favorite curry or gravy-based dish. Enjoy your delicious and flaky Warqi Paratha!
