Kata Kat

Kata kat is also known as taka tak in Punjab. It is originated from the city of lights – Karachi and now popular in almost every part of Pakistan. This dish has its own popularity among people of all ages. Experiencing the preparation of kata kat is different and appetizing. It is a combination of meat organs like lungs, livers, kidneys, heart etc. All these parts are mixed with spices and finely chopped in the griddle by the help of two sharp blades. The sound made during the preparation is  Kata kat Kata kat and thats how it has been named kata kat. People sitting in the restaurants hear this sound and enjoy the live cooking of it.

Recipe

Ingredients

  • 1 lb mutton or beef (with bones)
  • 1/2 cup kidney or liver, chopped (optional)
  • 1/2 cup heart, chopped (optional)
  • 2 tbsp ginger-garlic paste
  • 2 tbsp tomato paste
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt, to taste
  • 1/2 cup oil
  • 2-3 green chilies, chopped
  • 1 onion, chopped
  • 1/2 cup cilantro, chopped
  • 2-3 tbsp lemon juice

Directions

  1. In a pressure cooker, add the meat, ginger-garlic paste, tomato paste, cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Add enough water to cover the meat.
  2. Close the lid of the pressure cooker and cook for 20-25 minutes or until the meat is tender.
  3. Once the meat is cooked, open the lid of the pressure cooker and remove the bones. Add the chopped organs (if using) and cook for another 5-10 minutes.
  4. Using a wooden spatula or a meat tenderizer, chop the meat and organs together until finely minced. This process is known as “Kata Kat” and can also be done on a hotplate or griddle.
  5. In a separate pan, heat oil and add green chilies and onion. Saute until the onion turns golden brown.
  6. Add the minced meat and organs to the pan and stir-fry for 5-7 minutes.
  7. Add cilantro and lemon juice, and stir-fry for another 1-2 minutes.
  8. Serve hot with naan bread or paratha. Enjoy your delicious kata kat!
