What else would you ask for if Gajar ka halwa is in front of you in a winter night. One can not even resist the aroma and appearance of gajar ka halwa (carrot pudding). You can find this scrumptious dessert in bakeries and sweet shops. Carrot is a winter vegetable and thats why gajar ka halwa is cooked in winter. Its preparation needs a lot of hard work as its grated in a large quantity and continuously simmered in ghee and sugar. It is garnished with nuts and khoya. It is also served in wedding ceremonies as a sweet dish.



  • 1 kg carrots, peeled and grated
  • 1 liter full-fat milk
  • 1 cup sugar (you can adjust according to taste)
  • 1/2 cup ghee (clarified butter)
  • 1/2 cup chopped cashews
  • 1/2 cup raisins
  • 1/2 teaspoon cardamom powder


  1. In a heavy-bottomed pan or kadhai, heat the ghee on medium flame.
  2. Add the grated carrots and sauté for 10-12 minutes or until the raw smell of the carrots disappears and the color changes to a darker shade.
  3. Add the milk and stir well. Cook on low heat, stirring occasionally, until the milk starts to reduce and thicken.
  4. Add sugar to the pan and mix well. Continue cooking and stirring occasionally until the mixture thickens and becomes glossy.
  5. Add chopped cashews, raisins, and cardamom powder to the pan and mix well. Cook for another 5-7 minutes.
  6. Keep stirring the mixture until it thickens and starts to leave the sides of the pan.
  7. Turn off the heat and let the halwa cool down for a few minutes.
  8. Garnish with more chopped cashews and serve hot or cold.
