Achaar ( Lemon, Mango, Carrot, Chilli, Garlic, Mix )
Achaar is desi name for pickles in Pakistan. Hyderabad is famous in making achaar of different fruits and vegetables . Mango achaar is the most liked achaar in Pakistan. Mixed achaar is also popular among Pakistanis which include green chillies, lemon, mango and carrots. It is served with Paratha and daal chawal. It boosts up the flavour of every dish its taken with. Other flavours of achaar includes green chillies, garlic, amla etc.
Recipe
Ingredients
- 1 kg of your choice of vegetables (such as carrots, cauliflower, green beans, mango, or mixed vegetables)
- 1 cup vinegar
- 1 cup mustard oil
- 1 cup salt
- 1 cup red chili powder
- 1 cup fenugreek seeds
- 1 cup fennel seeds
- 1 cup cumin seeds
- 1 cup mustard seeds
- 1/2 cup nigella seeds
- 1/2 cup black peppercorns
Directions
- Cut the vegetables into small, bite-sized pieces and place them in a large mixing bowl.
- Add the vinegar and salt to the vegetables and mix well. Let the vegetables sit in this mixture for at least 1-2 hours.
- In a separate pan, heat the mustard oil until it starts to smoke. Remove from heat and let it cool.
- In a spice grinder, grind the fenugreek seeds, fennel seeds, cumin seeds, mustard seeds, and black peppercorns together until they form a coarse powder.
- Add the spice mixture to the cooled mustard oil and mix well.
- Add the spice mixture to the vegetables and mix everything together.
- Store the achaar in a clean, airtight container and leave it to mature for at least 2-3 days before consuming.
Note: Adjust the amount of salt, chili powder, and vinegar to suit your taste preferences. You can also add other spices, such as turmeric or coriander seeds, for additional flavor.
