Pakoray

Chai

Pakoray are the only thing that we Pakistanis want when the rain pours in. Pakoray are desi fritters which are made by making gram flour paste and adding different vegetables in it. These vegetables include onions, potatoes, peas, cauliflower etc. This paste is then deep fried and served with green chutney. Aalu k pakoray (Potato fritters) and mirchun k pakoray (jalapeƱo fritters) are very famous kind of pakorays. Our iftari is incomplete without pakoray and our rainy seasons are extra fun with pakoray.

Recipe

Ingredients

  • 2 cups of gram flour (also known as chickpea flour)
  • 1 medium-sized onion, sliced thinly
  • 2 medium-sized potatoes, peeled and sliced thinly
  • 1 green chili pepper, chopped finely
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (or to taste)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon salt (or to taste)
  • 1/4 teaspoon baking soda
  • Water (as needed)
  • Vegetable oil (for frying)

Directions

  1. In a large mixing bowl, combine the gram flour, cumin seeds, coriander powder, red chili powder, turmeric powder, baking soda, and salt. Mix well.
  2. Gradually add water to the mixture and whisk until you have a smooth batter. The batter should be thick enough to coat the vegetables.
  3. Add the sliced onions, potatoes, and green chili pepper to the batter. Mix well until the vegetables are coated evenly with the batter.
  4. Heat the vegetable oil in a deep frying pan over medium-high heat.
  5. Once the oil is hot, drop spoonfuls of the vegetable mixture into the hot oil, making sure not to overcrowd the pan. Fry the pakoras for about 3-4 minutes or until they turn golden brown.
  6. Remove the pakoras from the oil with a slotted spoon and place them on a paper towel to drain the excess oil.
  7. Repeat the process with the remaining batter and vegetables.
  8. Serve the pakoras hot with mint chutney or tamarind chutney.
