Chaanp
You must opt for mutton or lamb chanp (chops), if you are searching for a desi Pakistani dish. Chanp can be cooked in a variety of ways. It can be fried, barbecued or cooked in a stew. It is scrumptious to the last bite. Pakistanis love to chew meat directly from the bone as it looks very tempting to them. Chapati or puri goes ideal with Pakistani chanp. It is mainly available in Karachi, Lahore and Peshawar.

Ingredients
- 1 kg lamb chops (shoulder or rib chops)
- 2 tbsp ginger paste
- 2 tbsp garlic paste
- 2 tbsp red chili powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp garam masala powder
- 1/2 tsp turmeric powder
- Salt to taste
- 1/2 cup yogurt
- 2 tbsp lemon juice
- 1/4 cup oil
- Coriander leaves for garnish
Directions
- In a large mixing bowl, whisk together ginger paste, garlic paste, red chili powder, cumin powder, coriander powder, garam masala powder, turmeric powder and salt.
- Add yogurt, lemon juice and oil to the bowl and mix well to form a thick marinade.
- Marinate the lamb chops in the mixture for at least 2 hours or overnight in the refrigerator.
- Preheat oven to 375°F (190°C).
- Line a baking sheet with aluminum foil and place the lamb chops on the sheet.
- Bake the lamb chops in the preheated oven for 30-35 minutes, or until cooked through and browned on all sides.
- Serve hot, garnished with coriander leaves.
