Namkeen Gosht
Namkeen Gosht (salty meat) is a famous dish of Northern and western areas of Pakistan. But, mainly it is a pakhtun dish (highly apprecaited) in Peshawar. Namkeen gosht is made from the fresh meat which provides the fats for its cooking. Its cooking time is slow. The traditional spices that are added in Namkeen gosht are black pepper and salt. Mutton is commonly eaten by Peshawari men as they think that it has a complete source of energy for their field work. Other cities that have adopted the recipe of namkeen gosht are Karachi and Lahore. These cities add masala according to their own tastes.
Recipe
Ingredients
- Mutton ( 1 kg )
- Green chilies ( 6 nos fine chop )
- Onion ( 2 large size fine chop )
- Ginger Garlic ( 2 tbs )
- Salt ( 1-1/2 tea spoon )
- Water ( 1 liter )
- Yogurt ( 750 gm )
- Cardamom ( large 8 nos )
- Cinnamon ( 7 stick )
- Whole red chilli (12 round shapes )
- Oil ( 1/2 cup )
- Green chilies and green coriander
Directions
- Take deep pan put mutton, onion, ginger garlic and all spices beside whole red chilies add water.
- Cover pan with lid cook for 35 minutes.
- Add oil in mutton stir well until oil become on top.
- Whip the yogurt and put into mutton add whole red chilies cover with lid cook until the mutton become tender garnish with chilies and coriander.
