Kulfa Falooda

Falooda is a very popular street style dessert and drink at the same time. In Karachi, all the ice cream parlours have been their special falooda on top of the dessert menu. Falooda is made by rose syrup, basil seeds, vermicelli, and nuts. It is served with ice cream at the top. It is a power pack dessert for everyone. It is served with spoon and straw so that it can be eaten and drink at the same time.

Punjabi Falooda has kulfa in it. Kulfa is our desi ice cream made of thickened milk. It is rich in flavours and very satisfying to eat.Kasur has the most famous Kulfa falooda shop in Punjab. They serve it with kulfa, vermicelli, ice chips and sugar syrup. This mixture in a bowl is too exotic.

Recipe

Ingredients

  • 1 cup of vermicelli noodles
  • 2 cups of water
  • 1/4 cup of sweet basil seeds (sabja seeds)
  • 1/2 cup of rose syrup
  • 4-5 scoops of kulfi
  • 1/4 cup of chopped nuts (almonds, pistachios, etc.)
  • 1/4 cup of chopped fresh fruits (mango, banana, etc.)
  • Whipped cream for garnish

Directions

  1. In a pot, bring 2 cups of water to a boil. Add the vermicelli noodles and cook for 5-6 minutes or until the noodles are soft. Drain the water and rinse the noodles with cold water. Keep it aside.
  2. Soak the sweet basil seeds in 1 cup of water for about 15-20 minutes until they swell up. Drain any excess water and keep it aside.
  3. In a bowl, mix the rose syrup with 1/2 cup of water.
  4. Take a tall glass and start layering. First, add a few spoons of the cooked vermicelli noodles to the bottom of the glass. Then add a spoonful of the soaked sweet basil seeds on top of the noodles. Drizzle some rose syrup over the basil seeds.
  5. Add a scoop of kulfi on top of the rose syrup layer.
  6. Repeat the layering process with vermicelli noodles, sweet basil seeds, rose syrup, and kulfi until the glass is full.
  7. Top with chopped nuts, chopped fresh fruits, and whipped cream.
  8. Serve chilled.
