Kunna Gosht

Chiniot is a famous city of Pakistan near to Lahore. Chiniot has a variety of speciality in different fields. when it comes to food, Chinioti Kunna Gosht is very famous in Punjab. Clay pot is called Kunna in Punjabi. So, its name indicates that Kunna Gosht is the meat, usually mutton/beef shank, cooked in a clay pot with specific spices for 4-5 hours underground. Cumin is the main ingredient of Kunna Gosht. It is different from regular mutton dishes and full of aromatic flavours. Its served with naan or chapati.

Recipe

Ingredients

  • 1 kg mutton, with bones
  • 2 onions, chopped
  • 2 tablespoons ginger paste
  • 2 tablespoons garlic paste
  • 1 cup yogurt
  • 2 teaspoons red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala powder
  • Salt to taste
  • 1 cup desi ghee
  • 1 teaspoon cumin seeds
  • 1 teaspoon black pepper
  • 2-3 green chilies
  • Fresh coriander leaves, chopped for garnish

Directions

  1. In a large pot, heat the desi ghee and add the chopped onions. Saute until they turn golden brown.
  2. Add ginger and garlic paste to the pot and cook for 2-3 minutes.
  3. Add the mutton to the pot and cook for 5-10 minutes until the meat is browned.
  4. Add yogurt, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala powder, and salt to taste. Mix well.
  5. Add enough water to the pot to cover the meat. Bring to a boil and then reduce the heat to low.
  6. Cover the pot with a lid and let the meat simmer for 3-4 hours or until it is tender and falls off the bone.
  7. In a separate pan, heat 2-3 tablespoons of desi ghee and add cumin seeds, black pepper, and green chilies. Fry for a few minutes until fragrant.
  8. Add this mixture to the pot with the meat and mix well.
  9. Let the Kunna gosht simmer for another 10-15 minutes until the flavors are well combined.
  10. Once done, turn off the heat and garnish with fresh coriander leaves.

Your delicious Kunna gosht is now ready to serve with naan or any bread of your choice. Enjoy!
