Kaleji Kabab
Kaleji (liver) kabab is the first dish that Pakistanis eat on Eid ul Adha. Liver of chicken, goat or cow is grilled and gravy is made with fenugreek leaves. It is a dish that has separate fanbase. This dish is different from other meat dishes. It is widely served all over Pakistan. It is a nutritional food full of iron, potassium, zinc and calcium.

Ingredients
- 500g chicken liver (kaleji)
- 1 large onion, finely chopped
- 1 tsp ginger paste
- 1 tsp garlic paste
- 2 green chillies, finely chopped
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp red chilli powder
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala powder
- 1 tbsp lemon juice
- Salt to taste
- Oil for frying
Directions
- Wash the chicken liver thoroughly and cut it into small pieces.
- In a large mixing bowl, add the chopped onion, ginger paste, garlic paste, green chillies, cumin powder, coriander powder, red chilli powder, turmeric powder, garam masala powder, lemon juice, and salt to taste. Mix well.
- Add the chicken liver pieces to the bowl and mix well, making sure that all the liver pieces are coated with the marinade.
- Cover the bowl with cling film and refrigerate for at least 1 hour (or overnight).
- Heat some oil in a pan over medium heat.
- Once the oil is hot, add the marinated chicken liver pieces to the pan and cook for about 5-7 minutes on each side, until they are browned and cooked through.
- Serve hot with some green chutney or mint yogurt dip. Enjoy!
