Samosa Aloo

Aalo ke Samosay is the most common desi snack of all Pakistanis. Samosay are triangle shaped pastry which are stuffed with hot and spicy potato mixture. They are fried till golden brown. In Karachi, samosay are eaten solely at tea time where as, in Lahore aalo ke samosay are served with chickpeas gravy and sweet and spicy chutneys. That’s why Lahoris call it samosa chat as well. They are the most sold street food item.

Recipe

Ingredients

2 cups all-purpose flour

  • 2 tablespoons oil
  • Salt, to taste
  • Water, as needed
  • 4 medium-sized potatoes, boiled and mashed
  • 1/2 cup green peas, boiled
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 2 green chillies, finely chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds, roasted and crushed
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon garam masala powder
  • 2 tablespoons oil, for cooking
  • Oil, for deep frying

Directions

  1. In a large mixing bowl, combine the flour, salt, and oil. Add water as needed to make a firm dough. Knead the dough for a few minutes until it becomes smooth and pliable. Cover the dough with a damp cloth and let it rest for 15-20 minutes.
  2. In a pan, heat 2 tablespoons of oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Then add the ginger paste, garlic paste, and green chillies. Sauté for a minute.
  3. Add the boiled and mashed potatoes and boiled green peas to the pan. Mix well. Add the coriander powder, turmeric powder, red chilli powder, garam masala powder, and salt to taste. Mix well and cook for 5-7 minutes until the mixture is dry. Remove from heat and let it cool.
  4. Divide the dough into small balls. Roll out each ball into a circle of about 6-7 inches in diameter. Cut the circle in half.
  5. Take one half and fold it into a cone shape. Seal the edges by brushing a little water along the straight edge. Fill the cone with 1-2 tablespoons of the potato filling. Brush a little water along the remaining open edge and seal it to form a triangular shape.
  6. Heat oil in a deep frying pan over medium heat. Once the oil is hot, add the samosas and fry until golden brown and crispy. Remove from heat and drain on paper towels to remove excess oil.
  7. Serve hot with chutney or ketchup. Enjoy your delicious Aloo Samosas!
