Balu shahi
Balu shahi is a sweet which is famous in Punjab. Balu shahi is like desi doughnut. This dessert is made by flour, ghee and yogurt. The dough is fried and dipped in sugar. It is crispy outside and soft inside. Balu shahi is a part of many festivals in Punjab.
Recipe
Ingredients
- 1 cup all-purpose flour
- 1/4 cup semolina (sooji)
- 1/4 cup ghee
- 1/4 cup yogurt
- 1/4 tsp baking powder
- 1/4 tsp cardamom powder
- A pinch of baking soda
- Oil or ghee for deep frying
For sugar syrup:
- 1 cup sugar
- 1/2 cup water
- 1/4 tsp cardamom powder
Directions
- In a mixing bowl, combine all-purpose flour, semolina, baking powder, baking soda, cardamom powder, and ghee. Mix well until the mixture becomes crumbly.
- Add yogurt and knead the mixture to form a smooth dough. Cover the dough and let it rest for 30 minutes.
- In a deep frying pan, heat oil or ghee over low heat.
- Divide the dough into small equal-sized balls and flatten them slightly to form small discs.
- Fry the discs in hot oil or ghee until they turn golden brown in color. Remove them from the oil and place them on a paper towel to remove excess oil.
- In a separate pan, prepare the sugar syrup by combining sugar, water, and cardamom powder. Cook over medium heat until the sugar dissolves completely and forms a syrup.
- Add the fried Balu Shahi to the sugar syrup and let them soak in the syrup for 10-15 minutes.
- Remove the Balu Shahi from the sugar syrup and place them on a wire rack to cool down.
- Once the Balu Shahi have cooled down, they are ready to serve. Enjoy your homemade Balu Shahi as a sweet snack or dessert.
