Pamiri cuisine belongs to Hunza and Gilgit. The Pamiri cuisine does not include a lot of meat in it. It mostly consists of wheat, porridge and vegetables. Apricots and apricot oil is a very popular ingredient of their cuisine. They use apricot oil to brush it over wheat bread and vegetables. They consume different types of soups as well. There are still a lot of Pamiri cuisine to be discovered yet.

Recipe

Ingredients

  • 2 cups whole wheat flour
  • 1 tsp salt
  • 1/2 cup water (or more as needed)
  • Apricot oil (as needed)

Directions

  1. In a mixing bowl, combine the flour and salt.
  2. Gradually add water to the mixture, mixing with your hands until you form a dough that is soft and pliable.
  3. Divide the dough into small balls, roughly the size of a golf ball.
  4. Roll out each ball into a thin circle, using a rolling pin or your hands.
  5. Heat a skillet or griddle over medium-high heat.
  6. Place the chapatti on the skillet and cook for 1-2 minutes on each side, until lightly browned and slightly puffed up.
  7. Brush the top with apricot oil.
  8. Serve hot with any desired accompaniment.

Optional: You can add vegetables, herbs or spices such as cumin, coriander, or fenugreek to the flour mixture for added flavor.
